Today I found 4 large heirloom tomatoes (gave 2 away to a friend)
Last month I got 2 green peppers and a head of lettuce.
Find the apple bag and you have endless supplies for applesauce or apple crisp!
The bomb diggity if you ask me.
So what would I do with those? Make some fresh bruschetta. Oh yum!
Heirloom Tomato & Sweet Basil Bruschetta
One loaf crusty bread
2 large heirloom tomatos, diced
2 tbsp balsamic vinegar (give or take to your taste)
1 tsp olive oil
5 sweet basil leaves, finely chopped
1 clove garlic, finely chopped
Pinch of salt and black pepper
Start with your bread. Slice into thick pieces. Warm a good amount of olive oil (a few tbsp) in a deep skillet until hot. Place bread pieces in pan until browned evenly on both sides. Golden, crispy goodness!
Combine all other ingredients in a bowl, mixing well. It's even better if you can make this about 30 mins ahead of time, even before the brea, and let everything marinate together.
Top bread with tomato mix and sprinkle with parmesan cheese if you like!
